Carbon Steel Cookware
What professional kitchens have been using for centuries — before nonstick pans existed. Lighter than cast iron, builds a natural nonstick patina with seasoning that gets better every time you cook. No coatings, no chemicals, ever. There’s a break-in period, but it’s worth it.
What to avoid: Carbon steel pans with any kind of synthetic coating pre-applied. The beeswax protective coating on some French pans (de Buyer, Mauviel) is just a rust inhibitor for shipping — wash it off before first use, it’s not a cooking surface.

Ceramic Nonstick Cookware

Cast Iron Cookware
